Do you want to marry me?

You will when you taste this salsa!  It’s phenomenally out-of-this-world. If you plan on watching the Superbowl tomorrow, this would be perfect.  It would be perfect even if all you plan on doing is reading a book and eating in bed (that’s my favorite! Although I hate getting salsa on my sheets.)

This tastes best if it’s made the night before.  The recipe is large (4 cups or so) but people gobble it up like crazy.  Feel free to halve it if you’re eating it with only a few people. Those scoopy tortilla chips are perfect with this. (BTW this is head and shoulders above that avacado stuff made with Italian dressing mix. I like that a lot but this is better.)

Avacado Salsa

1 small onion
1 red bell pepper, seeds/veins removed (yellow is OK too, but green is lame)
1 large handful cilantro
4 cloves garlic, minced
1 can black olives, drained
1/3 cup olive oil
1/4 cup lemon juice
3 tablespoons cider vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 (16 ounce) package frozen corn kernels, thawed
4 avocados – peeled, pitted and mashed

Pulse the onions and red pepper together in a food processor until coarsely chopped.  Add garlic, olives, cilantro and pulse again til coarsly chopped. (if you don’t have a food processor then you’ll have to do all the chopping by hand. Poor you. Worth it, though!)
In a large bowl mix olive oil, lemon juice, cider vinegar, oregano, salt and pepper. Add onion mixture and corn and toss to coat.

Cover and chill in the refrigerator 8 hours, or overnight.

  3. Sounds kind of like my veggie salsa, but with way more bad breath elements. I’ll have to try it though cause I’m sick of making my veggie salsa. I tried a new recipe for guacamole yesterday that has sour cream and cream cheese. HOLY YUMMY. But seriously fattening.

  4. Thanks Jennie; this was delicious stuff. Will be making and eating this soon. I wouldn’t recommend halving it as when you finish a normal serving size you’ll want more.
